august recipe: blueberry cream flan

1 1/2 cups all purpose flour
1/2 cup Maple Sugar
1 1/2 tsp baking powder
1/3 cup soft margarine
2 egg whites
1 tsp vanilla
3 cups blueberries (fresh or frozen - not thawed)
In food processor or mixing bowl, combine flour, sugar, baking powder, margarine, egg whites, and vanilla; mix well. Press into bottom of 10 in / 3L cake pan, sprinkle with blueberries.  Continue Reading...

3 tsp. Roasted Garlic
3/4 cup Pure Maple Syrup
2 cup Mayonnaise
4 tsp Parsley
2 tsp Dijon Mustard
1 1/2 tsp Lemon Juice
Salt & Pepper - to taste
Mix all ingredients together until completely combined. Store in refrigerator.

july recipe: maple moon magic punch

1 cup maple syrup     1 cup orange juice
1/2 cup each brandy and lemon juice
1/2 cup maraschino cherry syrup
1 orange, lemon, and lime; thinly sliced
Optional: 1 bottle champagne

maple roasted squash soup

june recipe: nelson cupcakes

Sift 1 ¾ cup all purpose flour with 2 ½ tsp baking powder and ½ tsp salt. 
Flour ½ cup broken walnuts.
Cream ¼  cup shortening.
Gradually add 1 ¼  Maple Sugar.
Beat 2 eggs until slightly thickened, add dry ingredients alternately with ½  cup cream. Add nuts.

baked fresh fruit with maple

 4 large pears or peaches

1/2 to 3/4 cup maple syrup

Place peeled and halved fruit in shallow pan. Cover with syrup. Bake at 350 degrees Fahrenheit until tender. 

Serve hot or cold with whipped cream. Lovely with raspberries, blueberries and wild blackberries.

maple blueberry parfait

3 1/2 cups blueberries (18 ounces), divided
3/4 cup pure maple syrup (preferably Medium), divided
1 cup chilled heavy cream
1 teaspoon fresh lemon juice
6 ounces thin ginger cookies, coarsely crumbled

Cook 2 1/4 cups (3/4 pound) blueberries with 1/2 cup maple syrup in a 2-quart heavy saucepan over medium heat, stirring occasionally, until blueberries have burst, 3 to 8 minutes. Cool in an ice bath, stirring occasionally.

maple squash purée

5 pounds butternut squash, peeled, seeded, and cut into 1-inch pieces (10 cups)
2 cups water
1 3/4 teaspoons salt
1/3 cup pure maple syrup
3 tablespoons unsalted butter, cut into tablespoon pieces
1/2 teaspoon black pepper

Simmer squash in water with 1 teaspoon salt in a 5-quart pot (water will not cover squash), covered, until squash is very tender, about 15 minutes. Reserve 1/2 cup cooking liquid, then drain squash in a colander.
